Vinification
Harvest the grapes at 24ºB hand selected Sauvignon Blanc grapes with a yield of 7 ton/ha. The old Sauvignon Blanc Busch vines are situated on a southern slope looking out towards Table Mountain.
Tasting Notes
Herbaceous character from cool growing conditions. Vivid gooseberry, asparagus, fig leaf and passion fruit flavours, which skims across the palate with determined verve to a mouth-watering fruity dry finish.
Food suggestions
The richness and complexity of Darling Sauvignon Blanc is best accompanied by grilled Indian Ocean calamari, with buttered baby potatoes and garden salad. As this wine ages, it can be paired with richer dishes, such as seafood “potjie” or a rich wild mushroom risotto. The 2009 is better than the 2008, with more complexity.

The 2009/2010 vintage won the SA Champion Sauvignon Blanc at the SA National Young Wine Show 2009/2010.
