Vinification
Hand-picked at 24ºB and originating from low yielding cool climate vineyards. Fruit was crushed, and allowed to cold soak for 2 days. Fermented in traditional open fermenters (“kuipe”) with regular punch-downs for 5 days, after which the must was pressed and transferred to French barrique for malo-lactic fermentation. The wine was aged for 11 months blend, lightly filtered and bottled.
